One hour cinnamon rolls.

The fluffiest lightest and quickest dinner roll+cinnamon roll RECIPE:
INGREDIENTS
For the dough:
3.5 C. Warm/hot water or whole milk
3/4 C. Sugar
1 C. Oil
5T. Dry yeast
Combine all these👆🏼 and let rest 10 min.
Then add these:
10 C. Flour
(only 5 at first, then add in..)
3 eggs
1T.salt
After kneading for about 8 min...
Place on floured surface and knead for a few more passes with a handful of flour.
Return+cover in the oiled bowl with plastic wrap/damp towel in a warm environment until doubled in size, about 15 minutes
Divide dough in two-one per jelly roll pan
For the Filling:
Smear EACH with
1/2 stick of room temp butter
1/2 - 1 Cup brown sugar
2 T. cinnamon
DIRECTIONS:
Let’s roll it out :) Starting with the long end, roll the dough up tightly into a log. Pinch the seam closed and place the loaf seam side down in your prepared pan for cinnamon swirl bread OR slice with baking twine for individual rolls.
Cover loosely with plastic wrap/damp towel and let rise in a warm place for 10 minutes, until the rolls/loaf has risen above the pans. Just before baking, egg wash or lightly spritz/splash the tops of the with cream. (Helps with cracking and adds in loads of moisture)
Bake convection @350° or classic @400° cinnamon swirl loaves for 30 minutes/ Cinnamon rolls for 12 minutes or until lightly browned.
💛💛💛 Cover with aluminum foil if the bread begins to brown too quickly. ( I usually set my alarm for 8 min and check on their browning)
* Cool down loaves in the pan for 20 minutes, then transfer to a wire rack to cool completely on their sides then switch.
*Smear rolls immediately with frosting so the buttery goodness can become one with the glorious gooiness from the centers of the rolls.
Something I learned from Ina
Cream cheese frosting:
1-2 sticks of room temp salted butter
Pinch of good salt
2.5 tsp good vanilla
4-6 cups powdered sugar
Splash of cream or milk as needed
1 brick room temp cream cheese
( I like to speed up this process by pulling on the edges and putting the foil pack in the oven for 5 min while it's preheating )
This frosting is entirely up to your liking. Are you into more of an icing? Cool, add more milk or less powdered sugar. Want a more burnt flavor? Brown your butter before.
Lemon berry rolls:
Smear each roll with butter then switch out cinnamon sugar for your favorite marmalade/jam we love using lemon curd or the 4 fruits jam from Bonnie Maman-Each jar features chunks of real cherries, strawberries, redcurrants and raspberries-and all natural ingredients :)
For the topping/ glaze:
Zest from an entire lemon or tangerine
Juice from citrus
2-3 cups Powdered sugar measure with your heart :) for a honey like consistency
Maple espresso frosting:
1 bag powdered sugar
2 tsp. Maple extract
1/2 c. Milk
1/4 c. Melted butter
1/4 c. Brewed coffee/ T. Espresso powder
1-2 pinches of salt
Making dinner rolls?
Divide into 20 rolls each 4x5
(five rows of four)for dinner rolls..
Make it SUPER easy and try this method:
pull and pinch as you go. I like this trick just remember to flour your hands every couple ones you do. Here is a video here:
Make sure to smooth out the tops as you place them pinching the bottoms to hold the ugly seems in there.
Paint tops with an egg wash or cream/milk + flakes of salt
Cook for 12 min at 400° or 350° on convection for 13ish min.
⭐️If tops are getting too dark loosely place a sheet of foil over to shield the direct heat :)
