Sausage potato kale soup
Every one in this family slurps this one up. We are crazy about this sausage potato soup. 1 lb Italian Sausage- removed from casings 1 medium onion, finely diced or opt for onion soup mix 6-8 cups chicken broth/stock 4 garlic Trader Joe’s frozen cubes 5 medium golden potatoes, mandolined 1/2-1 kale bundle, deribbed +chopped 1 cup whipping cream or 1/2 & 1/2 Salt and cracked black pepper Parmesan cheese shavings: not optional Sauté onion+brown sausage together. While that’s browning slice up potatoes + layer on top in a deep cast iron stock pot. Add garlic cubes+ onion soup mix (if using fresh- garlic-mince and add to brown for the last minute along with the sausage.) Add chicken broth and simmer until potatoes are fork tender. Right before serving add kale and cream. Top with parm and serve along with rustic crusty bread. •Sometimes we add cooked bacon or white cannellini beans as well.
