Here’s the recipe!

Preheat oven at 350° (and warning… don’t over cook these :)

Mix in large bowl:

4+1/2 flour

4 tsp. ground ginger

2 teaspoon baking soda

1 1/2 teaspoon cinnamon

1 tsp. Ground Cloves

1/4 tsp. Salt

Beat in mixer:

1+1/2 c. Shortening (not butter or margarine 😂)

2 cups Sugar

1/2 cup molasses

2 eggs softly-add in eggs last

Roll in sanding sugar and sprinkle tops with chunky sugar/turbinado or roll a few entirely in the good stuff for extra texture and crunch.

Line a baking sheet with parchment paper, roll into 2” balls or double up for monster sized.

Cook 8 min for the Minis, 11 minutes for the Bigs.

Remove and let cook another 2 minutes on the baking sheet out of the oven.. then move to a proper cooling rack.

DO NOT wait until the edges are brown in the oven .. or you’ll make yourself a batch of gingerSNAPS💥

My mama normally doubles this batch. I love making mini ones- reminds me of this fabulous little bar in the village that serves them to you hot with your bill.
