Que-so...who's making dinner tonight to go with this?

We first had this queso at Miguels on Coronado when we lived in La Jolla.. they served it with grilled bread+a spicy marinara sauce as well. I don't even know what we ordered. But this queso was always a must- and lets be honest, this is why we came. My recipe is inspired by Miguels but we kicked it up a notch. you know.. with covid.. we all need things a little saltier, spicier so we added a kick to it.
ingredients:
2cups whipping cream
1 cup sour cream/ greek yogurt
2 heaping spoonfuls chicken bouillon paste OR 2-3 cubes/tubes
make a roux: 2 tablespoons clarified butter 1 tablespoon flour
1 jalapeno pepper, minced- no seeds
1 tablespoon jalapeno juice, from bottled jalapeno
1 handful mixture of cheddar+monterey jack cheese, shredded
Heat whipping cream in a heavy saucepan over high heat. Stir in sour cream when it's ready to boil. After sour cream dissolves, reduce heat to medium. Stir in chicken broth concentrate and jalapeno sauce and simmer. Meanwhile, make a roux by heating butter and flour. Whisk until mixture turns a pale gold. Increase heat on cream mixture until almost boiling and then add roux. Whisk briskly and constantly until roux is incorporated. Remove from heat, stir in minced jalapeno and the cheeses. Can be served with warm homemade tortilla chips, grilled bread, 3 hour pork carnitas or over homemade tamales.

ok here goes..
Using your kitchen shears take a stack of three corn tortillas and cut them in half- giving you 6 half moons. Now take those and cut them again but now in thirds giving you three little pizza slice stacks for each side.
Heat either corn or vegetable oil over medium heat while you prepare a plate with a paper towel-to absorb any extra oil.
Place tortilla wedges in oil and wait until the brown up or puff up slighty and turn over using a spider or slotted spoon only a couple minutes per side.
Once they have turned slighty golden, immediately remove and place on paper towel+sprinkle with chunky salt+seasoning. ( we like garlic seasoning, chipotle seasoning, treager steak rub is great too!)
