Tomato cucumber lemon basil poppyseed salad ☀️
Is it summer yet?? We love making and slurping up this salad-perfect along side a bbq pool party, beach picnic or throw over a giant green salad with feta +shawarma chicken +purple grapes+left over roasted/grilled veggies +nuts!
In a food processor:
30 basil leaves
Zest+juice of 1 lemon
1 handful flat leaf parsley
3 Tablespoons honey
1/3 cup avocado oil/olive oil
Salt+freshly ground pepper
Pour over a garlic clove rubbed bowl:
1 Persian cucumber quartered lengthwise+chopped into bite site pieces
1 pint grape tomatoes halved
1 pint halved heirloom tomatoes
1Tablespoon poppyseeds
